Inspired by the annual tradition of Wilma making Christmas puddings on Victoria Derby Day using the 1968 Australian Women’s Weekly recipe, Cam envisioned distilling these festive flavours. As a child, the aromatic essence of Christmas lingered in his house over Cup Weekend, creating cherished memories.
“I found the recipe and thought it would be fun to start doing it with my girls every year. But even as I was buying all the ingredients at the shops (mixed peel, oranges, dried fruit), I just kept thinking how well it would all distill. And with juniper having such a great pine needle character to begin with, a Christmas gin just started to make sense really quickly.” – Cameron Mackenzie
Now, the Four Pillars family annually gathers in Healesville to craft puddings using this cherished recipe. Cam distills them, aging the resulting gin in Rutherglen Muscat barrels for a year. To perfect the palate, a touch of Rutherglen Classic Muscat is added, creating a gin that smells like Christmas with juniper-led Christmas tree notes and plum pudding character.
